You loved this one. Two bowls of rice! The sugar in the Coca-Cola caramelizes the spare ribs to sweet-savory perfection. Dad, the engineer, thinks the soda acid tenderizes the meat too. I just know this is always a crowd pleaser and oh so easy! Another fab recipe from Grandma Lim.

Coca Cola Spare Ribs
1 lb spare ribs
2/3 tsp salt
1 1/3 tbsp light soy sauce
1 tbsp Chinese wine (花雕酒) or Vermouth
2/3 tbsp corn starch
2 tsp vegetable oil
3 cloves garlic, minced
11 oz. Coca-Cola
A. Marinate the meat with the ingredients, adding the corn starch last. Set aside in the fridge for at least 30 minutes.
B. Heat the oil. Fry the garlic until fragrant, taking care not to burn it. Add the marinated meat (A) and fry until browned and fragrant. Add the Coca-Cola and bring to a boil. Lower the heat and simmer, uncovered, for 1 1/4 hours.
Served here with stir-fried garlic shoots, green beans with lap cheong (Chinese sausage), six-flavored soup (六味汤) and steamed jasmine rice.
