This was so good I almost ate it all straight out of the jar! Good with fish, good as a vege dip, good on its own.
1″ knob of ginger, peeled
3 cloves garlic
1 bunch cilantro
1 cup roasted unsalted cashew nuts
2 limes, zest and juice
2 tbsp light soy
3 tbsp good quality olive oil
In a food processor, pulse all the ingredients except the olive oil until they form a paste. Then, while still pulsing, drizzle in the olive oil. Voila!
Served tonight with baked red snapper and cauliflower rice.
