Recipe: Simple Soup

Comfort food. A simple broth that my nanny used to make for me growing up in Singapore. Can be served over rice or macaroni. 
Simple Soup

2 bone-in chicken breasts or 2 lb pork spare ribs

1 onion, roughly chopped

2 potatoes, peeled and cubed

2 tomatoes, quartered

2 tsp salt


Put all the ingredients in a pot that fits everything snugly. Cover with water and bring to a boil. Lower the heat and simmer gently for at least 1 1/2 hours. 

Optional: Garnish with fried shallots (pictured) or chopped scallions.
