Recipe: Frittata Breakfast Cups 

Dear Offspring,

The secret to a smooth morning is to be prepared – girl guide motto. In our household, bags are packed and in the car the night before. Lunch is made and in the fridge ready to go. Breakfast is prepped to start the next day right. That means coffee already ground, milk already poured, toast already in the toaster oven, and among other delights, a pan of breakfast frittata cups cooked over the weekend ready for the microwave. 

This will be your weekend chore when you are older.

Breakfast Frittata Cups

Makes 4 ramekins

Any combination of the following ingredients, chopped: fried onions, mushrooms, frozen spinach (thawed), ham, crispy  bacon… the sky’s the limit.

6 eggs

2 tbsp milk or water

3-6 oz shredded cheese 

Salt & Pepper


Preheat the oven at 350F.

Divide the fillings between 4 buttered ramekins. Beat the frittata ingredients to mix well. Divide equally between the 4 ramekins. 

Bake for 15 minutes. 

Serve with a dash of Tabasco to kickstart your day!
