Recipe: Curried Roasted Cauliflower

Another easy one for you. #2 chowed it down enthusiastically (but what doesn’t she eat enthusiastically?).

Curried Roasted Cauliflower

Preheat the oven at 400F. 

Cut up one head of cauliflower into individual florets. 

Heat 2 tbsp olive oil in a wok. Add 3 tsp of curry powder and mix into a paste. Add the cauliflower florets and toss with a ladle until they are covered evenly with the curry paste. Season with salt. Toss again

Transfer into a baking pan. Roast for 20-25 minutes. 

Served with cream of chicken soup and garlic bread last evening. Another easy dinner, if dinner isn’t burnt when you get home late after school pick up and swim lessons (that might or might not have happened yesterday).
