Kaffir Fruit Salad with Shrimp

A variety of fruit cut into chunks like pineapple, watermelon, papaya, star fruit, mango, pomelo or grapefruit. 

Dressing is made up of freshly squeezed kaffir lime juice, fish sauce and palm sugar in a ratio of 3:2:1 – ground together in a mortar & pestle. 

Garnish with finely julienned kaffir lime leaves and toasted sesame seeds (optional). 

Serve with boiled or grilled tail-on wild-caught shrimp, peeled and deveined.
